Made exclusively from selected hillside grapes grown in the hamlet of Santo Stefano di Valdobbiadene, in the heart of the Prosecco DOCG Valdobbiadene area, nourished by terrain where clayey soils lie atop marine sandstone, which lends the fruit an elegant natural acidity and notable scents.
Classification: Controlled and Guaranteed Designation of Origin (DOCG).
Area of origin of grapes: the hills of Santo Stefano.
Average altitude of vineyards: 250 - 350 metres sl.
Type of terrain: varied soil with morainic, sandstone and clay elements. limy, low-nutrient, welldrained.
Harvest period: 20 September - 10 October.
Vinification: soft pressing of grapes, static decanting of must, fermentation at controlled temperature (15-18°C). Fining and rest in contact with the feccia nobile (characteristic fine sediment) for three months.
Second fermentation: Charmat method in pressure tanks.
Re-fermentation temperature: 15-17°C.
Duration of cycle: approximately 40 days.
Alcohol content: 11% by vol.
Sugar content: 14 g/l.
Appearance: straw-yellow colour. Thick foam and fine, persistent perlage. It has a delicate, lively aroma, notes of meadow flowers blend together in a harmonious combination of rare finesse. The flavour is slightly soft, balanced, full-bodied, pleasantly sourish and fruity.
Serving: chill just before serving to 7-8° C. Ideally served in an ice bucket.
Storage: in a cool, dark place. Avoid long periods in the refrigerator.
